Lemon and Artichoke Chicken! Very tasty, super easy to make, and reheats easy for the 2nd and 3rd days.

Shari’s Thoughts:

Confession: I joined Caffeinated Crossfit because of a Groupon and close proximity to my house. I belonged to another gym for years, but never went because of the distance. At least that’s the mental excuse I used over and over to avoid working out. My first few sessions at Caffeinated Crossfit were a hot mess. Seriously, buckets of sweat rolling off of me as I rolled around on the mat like a Weeble Wobble (dating myself) while attempting my next burpee, air squat, dead lift or whatever torture Christine had planned for the day. But after each workout, I felt a little more coordinated and noticed that I had more energy during the day. So I canceled my other gym and officially signed up with Caffeinated Crossfit!

Shortly after joining, Christine sat me down and asked me about my goals. Honestly, I had no clue! I think I was all over the board on what I wanted to accomplish and in total denial about where I needed to focus: my weight. The “Nutrition Challenge” could not have come along at a more perfect time. The Hydrostatic dunk tank was a serious reality check. Seeing a piece of paper with the percentage of fat that I carry around every day was a big shock and motivator for change. Since the tank, I have completely aligned my eating habits with the Paleo plan and have committed to working out at least three days a week. The changes have been easy to make. Ok, that’s a fib. I have never planned meals, cooked more, re-structured a menu item (call me Sally) more than I have in the last two weeks. And sometimes the mattress wins in the morning when I should be doing the 6am WOD. But I am seeing results!

Today I hit the 16lb mark…I have lost 16lbs since joining late July! Eleven pounds are a direct result of the challenge!!! I have a short-term stretch goal to see a number on the scale that I haven’t seen in over seven years and I am only 19lb’s away. I may not hit this number by the end of the challenge, but I now know that I can and will see that number before Thanksgiving.

Oh, and I’m still a mess when it comes to working out and I can’t wait to have a carb come October 20th along with multiple glasses of wine. But I am sticking with the lifestyle changes because I love how I feel after each session, I love the results that I am seeing, and most importantly, I love my new Caffeinated Crossfit family. Thank you all for cheering me on!
